In 2011, Diane Roll launched Mama's Caboose as a food truck, bringing the concept of gourmet comfort food on wheels to the Shenandoah Valley. The vision was to provide a unique dining experience that combined the convenience of street food with the flavors of home-cooked meals. Mama's Caboose was inspired by the rich culinary heritage of Southwestern Pennsylvania and a passion for delicious food. Drawing from the flavors and traditions of the region, Mama's Caboose aimed to bring quality, homemade cuisine to the streets.

Mama's Caboose quickly gained popularity for its mouthwatering dishes, featuring cheesesteaks, reubens, and our almost famous nachos. The truck also worked as a mobile kitchen with each item on the menu crafted with care and attention to detail, reflecting Diane's commitment to quality ingredients and authentic flavors.

As Mama's Caboose continued to thrive, Diane expanded the business, exploring new opportunities for growth and innovation. In 2017, Mama's Caboose seamlessly transitioned into Dayton Tavern, a brick-and-mortar extension of the beloved food truck,

marking an exciting new chapter in the business's journey. 

In 2018 Dayton Tavern expanded once again, by integrating Mama's Caboose with Dayton Tavern, Diane created Dayton Catering Co. and Event planning. This business is housed in Bridgewater VA and custom caters for any event. 

With the pandemic, the restaurant and the catering company hit the brakes, but Diane pivoted and opened the North River Marketplace in the same location as the catering kitchen. Some of the same great food and plenty of new items are now available as Grab and Go by Dayton Catering Co. They are fully cooked and ready to take home and heat and eat!

Also located in the Market are several other vendors. Diane understands the difficulty of opening a small business and offers retail space to those who want to be entrepreneurs in the food and beverage category but can’t afford the startup.

In 2023 Mama’s Caboose was sold but Dayton Tavern, Dayton Catering Company, and the North River Marketplace stand as testaments to Diane’s vision, passion, and dedication to excellence. As the businesses continue to thrive, the legacy of Mama's Caboose lives on, inspiring future generations to savor the simple joys of good food and great company.
